dc.description.abstractAs part of the research project, the biological activity of postbiotics obtained using both commercially available probiotic microorganisms and isolates from fermented food products was evaluated. The microorganisms were cultivated on standard media as well as on media prepared from agri-food industry by-products, such as whey. A postbiotic extraction process was developed, and preliminary identification of metabolites present in the extracts and culture supernatants was performed. The antimicrobial activity of the postbiotics against eight skin pathogens was determined by establishing minimum inhibitory concentrations (MICs) and minimum bactericidal/fungicidal concentrations (MBCs/MFC) using the broth microdilution method. In addition, pathogen viability and the effects of postbiotics on biofilm formation and eradication were assessed. Their cytotoxicity toward eukaryotic cells was also evaluated. Furthermore, the antioxidant potential and anti-inflammatory properties of the obtained products were investigated. The conducted studies expanded the current knowledge on the relationship between postbiotic production conditions and their biological activity, including antimicrobial, antioxidant, and immunomodulatory properties, which may support the development of new, sustainable strategies for the production of cosmetic formulations.pl_PL
