The paper discusses the influence of culinary traditions in contemporary Poland, taking into account the complexity of this issue. Apart from the above, various factors moulding culinary traditions of a region have been considered. The agrarian-breeding economy, natural resources of geographical environment, tastes and traditional dietary habits of inhabitants of the region should be taken into consideration. The influence of culinary traditions of neighbouring regions, affluence of the local community and also its religion are of some significance as well.
The research was carried out in Janów, Biłgoraj and Włodawa regions in Lublin Province. The aim of the research was to establish the image of indigenous regional cuisine with dominating dishes of flour and groats, supplemented with milk and vegetables. Meat is rare in traditional diet of local residents. Among representative delicacies of the region one may find boiled dumplings stuffed with cabbage, fried pies, a type of gelatine dessert made of buckwheat groats, a kind of local bread (korowaj) and soup made of lettuce. The paper also characterizes the catering base of the examined region. It has been found that the majority of catering outlets are to be found in Włodawa region. These are mainly bars belonging to outlets of food type, and cafés belonging to supplementary outlets. As to additional activity, only a slight interest of their owners has been observed. The range of the use of traditional cuisine of examined regions has been proven to be limited and possible directions of its contribution to the development of local catering have been pointed out.

Tourism is one of forms of human social and economic activities. On the one hand, social activity is accomplished as temporary, spatial migrations of populations; on the other hand it boosts activities of local communities to take advantage of the opportunity of receiving tourists. Tourism is also described as “an economic phenomenon” due to the fact that it has become very quickly an active factor of socio-economic development.
The activity in the field of tourist economy requires mutual actions both of governmental and municipal authorities, as well as tourist establishments to increase the competitiveness and economic effectiveness of a tourist product. However, it should be stressed that the approach of the local community towards this field of economic activity must be especially favourable in order to achieve its balanced development and increasing profits. Local authorities, once adopting an accepted conception of tourist development, should accomplish it by means of given tools and instruments of socio-economic policy. Marketing and promotional-information activities can be considered as one of the most significant factors. A very vital factor conditioning a key role of tourism in generating economic activity in a district is its comprehensive perception, not only in terms of one district but also neighbouring district and the whole region.
A contemporary tourist wants to rest in an active way. He is not satisfied with being provided with food and accommodation. Tennis, mountain bikes, horse riding, water sports and similar tourist attractions are an integral part of a tourist package offered by many tourist-oriented districts including Uście Gorlickie. This district has several clear attributes generating the development of tourism, specific scenic features and rich cultural heritage, relatively easy access by means of communication, tourist base of various standards and human resources for organizing tourist events and providing service. No wonder that the strategy of economic development of the district from 1998 has put a particular emphasis on activities directly or indirectly generating the progress of tourism.
The local initiative in this aspect should be shown not only by the local authorities but also by the local community. Activities of “the actors of the development of Uście Gorlickie district” are conducted simultaneously. Main ventures in favour of mass tourism in aspect of investments and promotion are the domain of local authorities. Agro-tourism, and in fact all forms of tourism developing within the district’s limits, involve local community, exert an influence on the change of the profile of farms together with the change in the whole region, which is loosing its typical agrarian character and becoming gradually a tourist-agrarian region.
Tourism also influences demographic changes in the district. A favourable phenomenon of a limited migration of people to the towns has been observed.
An option of the programme, which stimulates the strong development of chosen places, has been carried out in the district. The activation programme allows the local authorities and local community with the use of financial means to boost their attempts to improve the town’s facilities:
– Gładyszow – plans of creating a hippotherapy centre as another element in an attractive offer of the Stud Farm of Hucul Horses,
– Wysowa – creating the base for the parallel development of the spa and tourist function due to adequate solutions in social and economic infrastructure.
The centres will attract greater number of tourists and, as a consequence, they will generate the tourist development of other places.

Szlak Romański jako przykład produktu turystycznego województwa łódzkiego

The present article has been based on the master’s thesis entitled The Romanesque Route as an example of the tourist product in Łódź region prepared by the author in the Department of Urban Geography and Tourism, University of Łódź (Tomaszów Mazowiecki branch) supervised by Bogdan Włodarczyk, PhD.
Within the boundaries of Łódź region there are seven Romanesque historical buildings. They are the following:
– the church dedicated to St. Idzi in Inowłódz,
– the belfry and St. Peter and Paul’s church in Krzyworzeka,
– the church dedicated to the Blessed Virgin Mary and St. Wojciech in Ruda Wieluńska,
– the church dedicated to St. Urszula and Eleven Thousand Virgins in Strońsk,
– the Cistercian Abbey with the church dedicated to the Blessed Virgin Mary and St. Thomas Beckett in Sulejów-Podklasztorze,
– the Collegiate Church dedicated to the Blessed Virgin Mary and St. Alexy in Tum,
– the church dedicated to St. Nicolaus in Żarnów.
Existing historical buildings inspired Stowarzyszenie Miłośników Kultury Średniowiecza Piastowska Droga Romańska (the Association of Medieval Culture Lovers, Romanesque Route of Piast Dynasty) (SMKŚ PDR) to design a project of a tourist-educational programme called “Romanesque Europe – Poland”. One of elements of this programme was to mark out an all-Poland tourist route – The Romanesque Route of Piast Dynasty. The route was divided into regional segments and since the beginnings of 1999 it has been developed and adapted. Till May 2003 the route was not marked out in the whole region, merely on the premises of chosen districts where the Romanesque monuments are located, and signs informing about “The Romanesque Route” appeared next to historic buildings. For the needs of the master’s thesis, the author connected places with Romanesque monuments creating in this way a tourist route of 452 km. in perimeter running through Łęczyca, Sieradz, Sandomierz regions and Mazovia. The route starts and finishes in Tum.
Tourist values, its accessibility and tourist infrastructure decided about attractiveness of “The Romanesque Route”. The most significant tourist values are Romanesque historic buildings due to which the route has been created. Moreover, on the route there are many other anthropogenic attractions such as historic brick and wooden churches, castles, palaces and manor houses. The route runs also through attractive places in the respect of nature (scenic parks, nature reserves, etc.). The distribution of tourist values and other elements comprising the tourist attractiveness of the discussed region is uneven.
To evaluate the size and the seasonal character of the tourist movement on “The Romanesque Route” is extremely difficult because of several reasons. One of them is the fact that none of the Romanesque churches keeps records of visitors. The author of the paper has failed to establish approximate data during interviews conducted with hosts of the churches. The only institution that keeps records of its visitors is the Regional Museum in Sulejów. However, these data cannot be used for generalizations for the whole route.
The origin of tourists indicates on the regional scope of “The Romanesque Route”.
Surveys by questionnaire conducted among different respondents’ groups have showed that Romanesque monuments are considered to be the most significant monuments of Łódź region. However, most people have never heard of “The Romanesque Route”. Only those people who were directly in contact with the originator of the route had some knowledge of that issue. “The Romanesque Route” despite the fact that it is connected with the oldest history of the Łódź region, and monuments, which constitute the route are vital elements of cultural heritage, is not a significant element in regional education.
Considering the information achieved during the research work and observing activities related to the trail’s organization, the author concluded that the tourist product i.e. the Romanesque Route had reached the off-market stage and she had an impression that it still has been in the phase of development of an idea. The process of activating the route has not been completed since 1999 and its main coordinator has been SMKŚ PDR (see above). Taking into consideration the fact that the route connecting main places runs through a vast territory of Łódź region, the author thinks that organizational and promotional activities should be supervised by the Regional Tourist Organization together with associations, parishes, local authorities of counties and districts. Moreover, local communities, for which the development of tourism related to the route may constitute the source of additional income, should be invited to cooperate. “The Romanesque Route” should be treated as a tourist product of the whole region and be promoted in an overall way.
Combining Romanesque historic buildings in a theme route does not turn it into a tourist product, which can be introduced onto the market. The route should be enriched with many elements which can make it more attractive (e.g. cultural events). A contemporary tourist is looking for fascinating and unique products and “The Romanesque Route” may become an interesting offer not only in the region but also in our country and even in Europe, provided its potential is skilfully handled.

The paper presents analysis of tourist movement in Łańcut and its prospective and the most significant directions of the development. Motivations and expectations of tourists visiting the County of Łańcut were described on the basis of the questionnaire research. Their opinions about tourist infrastructure in this area show conditions for an introduction of a new tourist programme. The project of this programme is focused on the propriety of old owners of the Łańcut Castle and cultural character of this region. The idea was confronted with preferences of tourists concerning spare time activities.
The preserved ancient buildings and their interiors, museums exhibiting collections of its proprietors together with the complex (the castle and the park) should create the future tourist attraction. Nevertheless, the key factor for the development of tourist function is investment in infrastructure and basic services.
According to the above, the core of tourist services in a region is usually created by the development of significant places of high quality services. Ancillary services can grow all around supporting the main tourist attractions. In consequence it may condition tourists’ long-term stay within destination place. Although visitors greatly evaluate Łańcut attractiveness as far as cultural and natural values are concerned, the new strategy is needed to gain investors for the region. The questionnaire research and further analysis of region’s potential lead to several conclusions.
Improvement of infrastructure such as accommodation facilities shall be followed by increased amount of sleeping places. The part of the plan should include development of local catering and creating music entertainment places, pubs, cafés as well as other places of social meetings. Realization of investment strategy demands more parking places and organization of stable and effective communication net among interesting tourist destinations of this region. Existing possibilities for sports events and activities also require additional funds. Thus, as it results from previous analysis, it will be the priority task for the new tourist programme to prolong the duration of tourists’ stay in Łańcut to more than one day. The cultural attractions joined with leisure time facilities are supposed to keep their attention for several days creating opportunity to discover the rich tradition of old Łańcut estate. All these elements should establish a new tourist product based on the identified trademark.
All around Europe, local communities try to obtain economic growth by emphasizing tourism. When included in the local policy of sustainable development, tourism may not only be a factor stimulating local economy, but introducing different, new and attractive advantages for its inhabitants. EU trends in tourism development show that the interest of East European and Polish undiscovered, natural places, as holiday’s destination, is growing. That allows for optimistic conclusions as far as development of tourism in Łańcut is concerned. Regarding previsions for prosperity of particular kinds of tourism activities such as business, cultural, incentive, active and sightseeing tourism, this region generates good possibilities and reveals potential for meeting tourists’ expectations and needs.
